For dinner on the final day of the trip, we ate leftovers. The centerpiece was grilled samgyeopsal, trimmings reserved from yesterday’s Gold Mountain Pork Bellies prep. On the side, the kimchi jjigae from lunch two days ago and kimchi fried rice from lunch yesterday; both had been made in an effort to finish off all the straggling kimchi bits piling up in the fridge. The perfect harmony of grilled pork bellies + kimchi, in any form, cannot be overstated. Also chilled cucumber soup with more cucumbers, as well as more chilies, picked fresh from the garden. Couldn’t have planned it any better.
