Chicken Breasts with Artichoke Hearts

For the next couple weeks, I’ll be engaging in a semi-intense diet/workout regimen.  The diet will comprise primarily of chicken breasts and sweet potatoes, other fruit and veg okay, no salt, no fat.  I’ll be maintaining the strict calorie restriction until September 23, the day before I leave for Manila on a research trip.  The workout, with a personal trainer for the first time ever will be a mix of circuit training and cross fit, geared towards increasing strength, stamina, and flexibility.  Nothing too much during the first few weeks, just enough to quickly get me down to a workable size, and then everything amped up once my body’s ready for the challenge, after my return from Manila.  I’ll try to maintain the discipline while I’m there.

No particular reason, really.  Except that I’ve become a fat unsightly wreck.  The time has come for a resurrection, a return to svelte and splendor.  Seriously, though, health is the issue.  I quit smoking a few months back.  But two decades of a pack-a-day habit took its toll, and it’ll be years before I begin to approach cardiovascular fitness.  Most of my joints, punished by a lifetime of high impact activity, pushed to the edge with sudden and massive weight gain in recent years, have begun to give out one after the other: left knee -requiring arthroscopic lavage – both ankles, right elbow, both wrists.  And the boozing, well, I’ll deal with that later.

I had an early dinner before meeting with the trainer later in the evening for the first session, where he explained what the regimen would entail.  Anticipating that chicken breasts would figure into it, I took the initiative and got a bit fancy with the artichokes (I still have standards).  The trainer praised me on the chicken breasts but prohibited me henceforth from making them taste too good (I’ll try to resist).
