With the bones of the snapper that I bought in Anilao over the weekend (see 8.268 Yukgaejang), plus tofu, enoki, scallions, bean sprouts, radish – all whitish ingredients combining for a delicate yet intense broth.

A majestic meal with nothing more than steamed rice and kimchi.

When the fish is fresh, jiri tang is the way to go (see also 8.079 Maya Maya Jiri Tang), because the simple broth allows the full flavors of the fish to come through.

My filleting skills need a lot of work, but the excess meat left on the bones actually help in this application.
