Seven-Layer Maya Maya Burrito

Seven layers:
- Pan-fried snapper (see generally 8.268 Yukgaejang)
- Chili sofrito (see generally 4.347 BBCCCC Whole Wheat Burritoes)
- Refried beans
- Pico de gallo
- Sour cream
- Spanish rice
- Romaine lettuce
BTW, my thing with seven layers (see for example 4.230 Seven-Layer Whole Wheat Burrito featuring Chicken and Quick Tapatio Salsa) is an homage to Taco Bell’s Seven-Layer Burrito, which was introduced in 1993, during my college days when Taco Bell takeout was a regular part of the diet. The original seven layers comprised (1) onions, (2) tomatoes, (3) lettuce, (4) refried beans, (5) Spanish rice, (6) sour cream, and (7) guacamole – apparently, designed to be a vegetarian item. I always include some animal protein in my own version.
Unfortunately, the snapper didn’t work so well, too tender to stand up to the other ingredients. A firmer fish, like swordfish, would do better.
Come to think of it, seven layers isn’t all that unusual. A Burger King Whopper is seven layers: (1) onion, (2) tomato, (3) lettuce, (4) pickle, (5) patty, (6) ketchup, (7) mayo.
