In the spirit of progress, I’m willing to accept as a general principle that Japanese-Peruvian fusion is a viable form of culinary fusion.  But I’ve never been convinced through personal experience, whether at this small boutique restaurant (see most recently 8.362 Nigiri Set) or at the global vanguard (see 7.124 Nobu, No No).
