(2) Chili paste, which provides an additional layer of spicy tang to complement the nutty earthiness of the bean paste and, more important, cuts through the heaviness of the fat. I scoffed at this bottled marinade when the W brought it home – “Jeez, woman, how lazy can you get?!” – but it’s become my goto – just a teaspoon – whenever I want a touch of sweet-savor-spicy, which is always if it can be so easy.
