For the first time ever, I made mapa tofu without meat (see for comparison 10.207 Mapa Tofu Rice).  I was very pleased to find that the dish turned out just fine, perhaps even better.  Confirms my general preference for cooking vegetables as vegetable dishes, and meats as meat dishes.
