Gambas al ajillo, which didn’t exist in Korea before I moved to the Philippines, where I learned to appreciate the dish at many Spanish restaurants in Manila, is now suddenly a mainstream dish here, appearing on the menus of neighborhood beer joints.

Served with my homemade bread, toasted.

I upped the standard recipe by adding saffron.
