Crêpes de Pommes de Terre is a French dish. Grated potatoes + cream cheese + Swiss cheese + cream + eggs, ladled on a buttered skillet and cooked into pancakes. In Julia’s words: “These are excellent with roasts, steaks, or chops. As a bed for fried or poached eggs, they may be topped with a cheese or tomato sauce.”
They were okay. The potatoes seemed to dilute the texture and flavor of cheese, and vice versa. Not worth the effort.
