Prepping standard Korean saengseon jeon, I was suddenly reminded of a jeon-like Italian application that I’d attempted long ago (15 years!) (see 7.002 Artichokes à la Milanese).  This time, I pan-fried the fish in butter + olive oil, topped each piece with tomato sauce + shredded Pecorino Romano + arugula.  I don’t know if this is really an Italian thing, but it tasted Italian.
