Maeun tang should be one of my favorite Korean dishes: fish + dubu + vegetables in a spicy broth – what’s not to like? Surprisingly, I’ve only made it 3 times in the history of GMTD: once in 2021 (see 12.045 Domi Maeun Tang), once in 2020 (see 11.315 Daegu Maeun Tang), once in 2018 (see 9.259 Maeun Tang), nothing before or since.

One step that I take in preparing the fish is to marinate the pieces for about 20 minutes in rice wine, which (theoretically) adds flavor and masks any off flavors, should the fish be less than pristinely fresh.
