Gatten Express is a Japanese restaurant chain. Specializes in sushi. Curiously, the (currently 3) Express locations make the sushi to order, while the chain’s (currently 12) standard Gatten Sushi restaurants offer the items on conveyor belts.
While the negitoro was a bit too mushy for me, as if the tuna had been puréed, I was very happy that the menu had it, especially in a mall setting, hopefully a sign that the dish is becoming more mainstream.
