This dish and the dish within the dish, representing the culinary coda to my recent gastronomic experience in Hong Kong, combines two souvenirs that I picked up during the trip.  The goose was the last of the boxed roast goose that I’d purchased at the airport (see 3.142 Roasted Goose).  The bowl had been acquired through less conventional means (see 3.140 Noodles with Shrimp and Squash).   International commerce.  Cultural exchange.
