Black Pepper Slipper Lobster

Clam & Mushroom & Ginger Soup (3.25) — building on the basic formula (see generally 6.115 Clam & Ginger Soup), but enhanced/improved with the addition of straw mushrooms — very “Chinese” — and sliced scallion.

In the wake of the restaurant’s recent change in ownership (see generally 6.122 Prawns with Ginger & Onion), the kitchen has undergone a marked improvement, as reconfirmed for the second time tonight.  Singaporean-style black pepper stir-fry was outstanding, savory and spicy, providing a delicate kick to the lightly deep-fried pieces of slipper lobster — a new addition to the range of available preparations, this could work with jumbo prawns as well.  After a hard year of struggling to develop a menu from the limited offerings at this place, I’m happy to be overwhelmed by the new options.

    also, pretty sure those are straw mushrooms, not button. we call them cao gu.
