Chutoro Aburi Sushi

As I write this post, I’m surprised — though not shocked, as this blog often shows how fast and furtively time flies — that I hadn’t been to my favorite Japanese restaurant for dinner in over 4 months (see most recently 6.123 Sushi…).
Compared to shellfish, the aburi application works much better on fish, particularly fatty fish like tuna belly (toro), which provides a stronger and more satisfying contrast of texture and taste when charred.
