Three-Cup Chicken is a Taiwanese chicken dish.  Chunks of chicken braised in rice wine, soy sauce, and sesame oil — the name (in Chinese : “san (three) bei (cup) ji (chicken)”) would suggest 1 cup, or at least equal parts, of each, though most recipes call for varying amounts — along with sugar, pepper, and other aromatics, reduced to a thick glaze.
