The steak – chuletón (large cut) de res (beef) – was awesome. As per the menu: 800g sous-vide chargrilled US certified black angus prime rib, pepper sauce, roasted sweet potato, pumpkin, beetroot, asparagus. Silky, succulent meat, with a touch of crispiness from the crust – exactly how sous-vide meat is supposed to work. Perfectly seasoned, plus a drizzle of a delicate yet punchy chimichurri sauce. Best piece of beef that I’ve had in the Philippines.
