Maya Maya Kalguksu

By default, a heavy stock (e.g., chicken or beef) is more amenable to carry the thick kalguksu noodles, but a delicate stock (e.g., anchovy or clam) can make for a more sophisticated experience if deep enough in flavor.

Here, if I had derived the stock from the bones of the maya maya (red snapper), this would’ve been quite nice.  However, just the flesh itself wasn’t enough to impart sufficient depth.  Still, not too bad overall as a light noodle soup.
