Pan-Seared Scallops in Pan Gravy

By aggressively patting out the surface moisture of the scallops, I was able to achieve a better pan-seared crust.
The problem is that the scallops that I have access to in the Philippines come brined, frozen, packaged, which are inherently moist by design.
