Gai hor bai toey is a Thai dish.  Chicken (gai), cut into chunks, marinated in a soy-based sauce, wrapped in pandan leaves (bai toey), then deep-fried (hor).  The leaves protect the chicken from scorching and, in theory, imbues the meat with flavor.

It was okay.  The chicken was juicy and tasty, though a bit mushy, perhaps could’ve done with a bit more deep-fry.  I’m not convinced that the pandan contributes much flavor.

No tables available in the main dining hall, we were happy to sit in the bar – immediate access to refills on the bottomless gin & tonic for me.

Confirming our first visit, the food was good, though nowhere near as good as the flagship Thai restaurant of the flagship Thai hotel should be.
