Steamed Coral Trout in Soy Sauce

Mission to Fiji, Day 5.

In Suva.  Here to conduct a series of planning meetings and ocular inspections – Friday and Saturday in Nadi, Monday and Tuesday in Suva, Thursday in Nadi again – in preparation for the Fifth Meeting of the Asia-Pacific Parliamentarian Forum on Global Health, which will be held in Fiji in August 2019.  This is the third such mission in advance of the Fifth Meeting (see previously 10.049 Termite Mushroom Steamed Halibut).

Deep-Fried Squid with Black Pepper (2.5): as advised by the server, and confirmed by observation – every table in the place had one – this is the restaurant’s number one seller; it was okay.

The fish was excellent.  Coral Trout = grouper or lapu-lapu.  The flesh was both firm and delicate.  The soy-ginger sauce was a tad bland.  Otherwise, a fine rendition of the classic Cantonese dish.
