Revised the recipe a bit.

Never thought of saengseon jeon as a luxury, but I’m so deeply grateful that we have access to the ingredients fora such things during these challenging times.

Pollack (myeongtae/dongtae) works well for its firm texture, which holds up well, but I prefer cod (daegu) for its flavor.

Cham Sauce is a food product by the Korean brand Woorifoods.  Essentially a sweet and tangy soy sauce – like Japanese ponzu but sweeter, not as tangy.  Not entirely traditional – in fact, the bottle says that the sauce is imported, though not from where (probably Japan).  In any case, it’s a perfect dip for jeon, mandu, grilled meats.

Again, condiments aren’t strictly necessary for a properly seasoned saengseon jeon, but the boys love this stuff.
