Enhanced Community Quarantine, Day 70 / Repax Day -5.
We will miss the house, probably the nicest (or at least most spacious) house that we will ever live in. On one hand, I regret that we were forced to spend 3 of our 14 months in the home under quarantine. On the other hand, I am grateful that we had such a house, including a swimming pool, which gave us the space inside and out to breathe, figuratively and literally, and maintain good spirits and sanity during the confinement.

The bad news is that the spread of COVID-19 continues to rise in many countries across the world, including the Philippines.
The good news is that the situation in Korea appears to be stabilizing.
Tonight’s dish confirms my theory that unprocessed (i.e., not brined) scallops are easier to sear (see 10.216 Pan-Seared Scallops with Spaghetti in Garlic-Butter Sauce), and ultimately taste better, like actual scallops.
