Crema di Patate

So long as I’m working my way through the spaghetti recipes in The Silver Spoon, I will also try out other recipes.
Crema di Patate is an Italian soup. Just potatoes + scallions + vegetable stock + cream.
So utterly simple, like most of the recipes in the cookbook. It came out just fine.
However, I seem to recall being blown away by the French potage parmentier – essentially the same thing – made from Julia Child’s recipe in Mastering the Art of French Cooking (see 3.137 Potage Parmentier) – perhaps I was more impressionable back then.
