With business down across the board, restaurants must be struggling to maintain fresh ingredients.  Korean BBQ restaurants specializing in marinated meats presumably have it a bit easier, as the marinade can mask any off odors that could develop in meat that is beyond its prime.

Here, at our now go-to neighborhood Korean BBQ joint (see most recently 12.001 Dweji Galbi), we ordered an unmarinated cut for the first time.  Just curious, I took a sniff at the pork before it was put on the grill.  The meat smelled like absolutely nothing, which is a good thing.
