Lasagna Ribbons in Truffle Cream Sauce with Shiitake and Shrimp

Cut the lasagna into shorter-wider ribbons and paired them with a thicker-heavier sauce (see for comparison 9.177 Lasagna Strips with Tomatoes & Garlic).
Very nice. I will do it like this as a standard practice, not just when the pasta approaches the expiration date.
