Made with Lau confirms that Chinese restaurants these days sometimes use Mexican tortillas as a substitute for mushu pancakes (see exchange at 08:00 Moo Shu Pork, Cantonese Style), a trick that I’d learned from my half-Shanghainese uncle (see for example 1.363 Mushu Beef in Tortilla Wraps).

Recently, I’ve used tortillas in other pancake applications, such as Peking-style chicken (see 13.188 Mommy and Baby in a Mexican Blanket), and jianbing (see 12.070 Scallion Egg Wraps).
