Saewoo Sogeum Gui is a Korean dish.  Simply whole shrimp (saewoo), placed on a bed of salt (sogeum), then grilled (gui).

Live shrimp, which twitched in the throes of death for longer than expected, before finally succumbing to the sweet (and salty) stillness of eternity.  

Can’t believe over 2 years have passed since our prior visit (see most recently 13.218 Jogae Tang) – once again, GMTD reminding me how fast time flies, seemingly more so every year.

Fully cooked, the pan was taken back to the kitchen, where the heads were removed, then returning the pan to the table.

It was fine.  As demanded by the simplicity of the dish, the shrimp were impeccably fresh, extremely sweet, enhanced with a hint of smoky saltiness.   If anyone can appreciate the pure flavor of shrimp – no more, no less – this is the dish.

The heads were sautéed in butter and served as a side dish.
