Impossible to believe that I haven’t made shabuki in nearly 12 years (see most recently 5.322 Shabukity), though I did prepare a more traditional shabu shabu 5 years ago (see most recently 12.130 Shabu Shabu).

The price of 3,900 per 100 grams of Hanwoo 1+ is suspiciously low, I should’ve realized.

Inspired yet again by the daily meat special at Well-Being Mart.  Previously:

  1. 17.181 Grilled Daepae Samgyeop + Pyogo
  2. 17.185 Hanwoo 1+ Yangnyeom Bulgogi
  3. 17.198 Hanwoo 1++ Yukhoe
  4. 17.207 Hanwoo 1+ Eonyang Bulgogi
Naengi got lost in the mix – shoulda used more (see for example 17.086 Naengi Jjambbong).

Despite the Hanwoo 1+ billing, the meat wasn’t very good.  Turning weirdly dark upon hitting the broth, it came out dry and flavorless.  Given the price, probably some tough cut that would ordinarily require low and slow cooking.

No matter, shabuki is more about the vegetables.

Looked reasonably marbled.

Like hoe deopbap (see most recently 17.267 Hoe Deopbap), shabuki is easy, cheap, healthy, and tasty, so it must be reinstated as a regular in the rotation.

As always, finishing with kal guksu in the broth, now super rich in beef and vegetable flavor.
