When a restaurant customer demands a tableside examination of a live specimen before ordering it, the act is generally a self-indulgent demonstration of petty power – yes, I shall be pleased to eat this one.
But in my case, I use the opportunity to gaze into the animal’s eyes and express gratitude for its sacrifice.
