Scallion & Woodear Omelet

Inspired by the dish from Seafood Market & Restaurant (see 8.005 Scrambled Eggs with Black Fungus and Scallion), which I’ve previously emulated (see 11.048 Shrimp & Scrambled Eggs with Wood-Ear Mushrooms), this time as an omelet, rather than scrambled.  The form facilitated uniform browning on the outside, while preserving a layer of creaminess in the middle.
