The 6th in an on-going series of burger experiments made from various types of pre-made patties, this time with fresh ddeok galbi (plus gochujang-mayo sauce):

  1. 13.066 Chicken Burger (with chili-ketchup)
  2. 13.070 Cheese Tonkatsu Burger (with tonkatsu-mayo)

I don’t recall ever seeing these at regular price.

The J-Mart offers hanwoo ddeok galbi patties made in-house, presumably from leftover scraps – a great way to use up leftover scraps of hanwoo.

As if made for burgers.

Ddeok Galbi is a Korean dish.  Beef, technically short rib (galbi), which is deboned, minced, marinated (i.e., in the standard galbi sauce: soy sauce + garlic + sugar + sesame oil etc), shaped (i.e., into cakes (ddeok) (some recipes call for reshaping the meat around the bone), grilled.  As such, the meat is much more tender and easier to eat.  One popular theory is that the technique was developed for elder officials in the royal court, who had difficulty and/or didn’t want to bother chewing whole meat directly off the bone.  Nowadays, it’s a popular dish to make for kids, who have difficulty and/or don’t want to bother chewing whole meat directly off the bone.

Someday, I’ll feature the dish in its traditional form, not as a burger (see also 1.280 Holic Chicken Baguette + Ddeok Galbi Burger).

Ready in a few minutes.

The burger was good.  Juicy patties, nicely seasoned.  The toppings, including cheese + onion + tomato +  sauerkraut + sauce, were fine.  Better than so-called bulgogi burgers sold at fast food chains (see for example 2.295 Bulgogi Burger) .
