Following various experiences with Kitchens of India, both hit (see for example 13.343 Butter Chicken Curry) and miss (see for example 13.194 India Punjab Golden Butter Naan (Mexican Supermarket Tortilla)), this was the first time trying a marinade.

While the instructions call for 450 grams of meat, the paste was more than enough for 800 grams, could’ve marinated twice as much.

The main objective of the meal was to use up pita breads that had been purchased at Foreign Food Mart – how long ago, I can’t recall – and kept on ice.  With ingredients on hand, the idea was to make a shawarma-like wrap.

Not pictured here, the mise en place also included a garlic yogurt sauce, as seen in the feature photo.

Would’ve turned out very nice, but for the pitas.  They had clearly gone stale while frozen.  Hoping to bring them back to life, I grilled them on low heat in a skillet, which made them dry and brittle.  Otherwise, the chicken and toppings and sauce worked well.
