To cut daepae samgyeopsal, a slab of pork belly is typically frozen then shaved into thin strips, which curl as they come off the slab. The meat is usually sold in curled form. In contrast, the introductory post on daepae samgyeopsal showed the meat packaged as long flat strips, perhaps cut from thawed pork belly (see 4.075 Daepae Samgyeopsal with Mixed Green Wraps).
The asparagus was cooked in the dripping fat from the pork bellies – nice.
